Creativity and innovation are at the heart of our business! To support our teams in this approach, a new Culinary Design and Creation service was launched in 2017. Led by our artistic director and your dedicated project manager, an entire department supports our customers in the creation of prestigious gastronomic events.

Our teama graduate of France’s top culinary schools and passionate about gastronomy, unearths the rarest productsthe most demanding and flavourful of dishes and culinary workshops worthy of the finest restaurants: lamb epigram and potato domino Francis Mallmann style, or creamy sea urchin in its shell, seasoned with black garlic and Thai cebette…

Throughout the year, our team of gourmet experts, inspired daily by the latest trends on the French culinary scene, innovate and offer our epicurean clientele unique dishes by creating tasty and unique combinations of flavors and textures. Drawing on this passion and experience, Trait’Tendance offers customized creations that reflect the theme chosen for your event, as well as the image of your company, your brand or your product.

It’s by maintaining a genuine relationship of proximity and trust with our suppliers and their products that we can imagine and create ever more innovative recipes. It’s with daring and talent that our chefs offer you a wide range of constantly renewed culinary animations. Creation, up-to-the-minute preparation and direct contact between our cooks and your guests have become the high points of our services.

Through all the challenges we take on throughout the year, our department supports our customers in the creation of customized food parts, from personalized menus and gastronomic, d’culinary events thematic and aesthetic… original creations, conceived in-house, from the first pencil sketches to their final preparation in the kitchen. Complementing our creative approach, our culinary design & creation department offers a photography service, in the studio or on location.

 

This year, in partnership with the Cité de la Céramique, Trait’Tendance has created an evening on the theme of “The beauty of gesture”, in reference to the exhibition of the same name.
This incredible encounter between aesthetics and delicacy highlights the talents of artists in residence, Sèvres artisans and off-site projects. Trait’Tendance took advantage of this event to reveal to the 300 guests the full extent of its expertise. the beauty and technical skills of our chefs through workshops refined culinary : Cream of foie gras glazed with nitrogen, sea bass ceviche or mini tarts filled with gourmet creams and decorated on a turntable.
