With spring just around the corner, chef Edouard Chouteau, in partnership with Trait’Tendance, has created an exquisite gastronomic menu for Château Léoville Poyferre, Bordeaux’s Second Grand Cru Classé. Held in the privileged setting of 6 Mandel, the 5-course lunch included: Mimolette sablé and fresh goat’s cheese puffs; oxtail pressé; duck wellington with pepper sauce and fine frisée; St Nectaire pâte pressée fermier with chutney; cardamom chocolate soufflé, licorice-glazed parfait. An exceptional meal, imagined by one of the most promising chefs of his generation and created in our ultra-modern 700m2 laboratory.
