Orange gratin

Ingredients (serves 4) :
– 4 organic oranges
– 3 eggs + 1 yolk
– 15cl liquid cream
– 50g brown sugar
– 1 tablespoon orange liqueur

Recipe:
– Preheat oven to gas mark 7 (210°C). Beat the eggs, yolk and sugar in a bowl. Add the cream, juice of 2 oranges and liqueur. Peel the remaining 2 oranges and slice into rounds.
– Butter 4 small gratin dishes. Arrange the orange slices in a rosette. Top with egg cream and bake for 15 minutes, until the edges of the gratins start to brown. Serve warm.
