For this new season, our Culinary Design & Creation department has chosen to honor fish from sustainable fisheries, recommended by Mr.Goodfish, as well as the first autumn vegetables grown in the fields of our partner producers:
- Mini mushroom and ricotta tartlet
- Perfect quail egg with morels and oyster mushrooms
- Sea bass and first root vegetables
- Sweet potato emulsion, almond, hazelnut and tonka foam
- Label Rouge salmon steak, potato rosette, iodized butter Le Beurre bordier
- Arctic char with coffee, onions and butternut
- Butternut roll with smoked duck breast from Les Fermes d’Alice
