Mirabelle Plum Tatin

Ingredients (serves 6):

– 800g mirabelle plums
– 1 organic lemon
– 1 roll puff pastry
– 120g sugar
– 70g butter

Recipe:

– In a frying pan, heat a tablespoon of water with the sugar until caramelized. Add the diced butter, then the mirabelles. Mix well to coat all the fruit.
– Arrange the mirabelles in a non-stick mould and leave to cool. Rinse the lemon and grate the zest over the fruit.
– Preheat oven to thermostat 6 (180°C). Unroll the puff pastry, place it on the mirabelles and tuck the edges inside the mould. Make small incisions in the dough with the tip of a knife. Bake for 25 to 30 minutes. Wait a few minutes before unmolding, and serve warm.
