Peach Tabbouleh

Ingredients (serves 4) : 
– 4 yellow peaches
– 1 untreated orange
– 100g bulgur
– a bunch of fresh mint
– 50cl almond milk
– 4 tablespoons liquid honey

Recipe: 
– Bring the almond milk to the boil, pour in the bulgur and simmer over a low heat for 10 minutes. Drain. 
– Poach the peaches in a pan of boiling water for 2 minutes. Remove with a skimmer and plunge into ice-cold water. Peel the peaches and cut into small cubes. Finely grate the orange zest and squeeze out the juice. Rinse the mint, spin dry and finely chop the leaves. 
– In a large bowl, mix the bulgur with the peaches, mint, honey, orange juice and zest. Serve chilled.
