Ingredients (serves 4) :
– 250g Valrhona dark chocolate
– 100g softened butter
– 5 egg yolks
– 10 egg whites
– 50g caster sugar
Recipe:
– Break the chocolate into pieces. Melt in a bain-marie. Remove from the heat and add the butter with a spatula. Mix coarsely.
– Whisk in the egg yolks, one at a time. Make a reservation.
– Using an electric mixer, beat the egg whites until stiff, gradually adding the sugar. When firm, gently fold into the chocolate mixture.
– Chill the mousse for 2h00 before serving.
