Ingredients (serves 4) :
– 4 oranges
– 1 untreated lemon
– 25cl fresh cream
– 2 eggs
– 2 tablespoons cane sugar
– 15g butter
Recipe:
– Peel oranges. Remove the white skin from the peel, cut into strips and plunge into boiling water for 5 minutes. Drain well.
– Peel and core the orange segments, reserving the juice.
– Wash the lemon. Remove the zest and set aside.
– Beat the egg yolks with the sugar, add the cream, orange strips and juice. Optionally, add a few drops of old rum.
– Beat the egg whites until stiff and fold gently into the mixture.
– Butter four small gratin dishes. Add the orange segments and cream. Garnish with lemon zest. Bake in a very hot oven (270°C/ thermostat 9) for 15 minutes. Serve immediately.
